    Production of microbial transglutaminase on media made from sugar cane molasses and glycerol

    Transglutaminase is an enzyme that catalyses an acyl transfer reaction between γ-carboxamide groups of glutaminyl residues and lysine residues in proteins. Due to this property, this enzyme is used for enhancing textural properties of protein-rich food. The transglutaminase used as food additive is obtained by microorganisms, mainly by Streptoverticillium ladakanum. On the other hand, sugar cane molasses is a viscous liquid rich in noncrystallized carbohydrates (saccharose, glucose and fructose). In this work, the feasibility of using sugar cane molasses as a carbon source for the production of microbial transglutaminase by Streptoverticillium ladakanum NRRL 3191 has been studied. Carbon sources including sugar cane molasses (60 g of total sugars per L), glycerol (60 g/L) and their mixture in a ratio of 1:1 (30 g/L of each) were evaluated. Time course of microbial growth, transglutaminase activity and carbon source consumption were determined every 24 h during 120 h of fermentations at three agitation speeds (200, 300 or 400 rpm). The results showed that with the increase in agitation speed, the biomass concentration increased up to 8.39 g/L in the medium containing sugar cane molasses alone or the mixture of molasses and glycerol. The highest transglutaminase activity was obtained at 400 rpm in the medium containing a mixture of molasses and glycerol, reaching 0.460 U/mL, while in the medium containing sugar cane molasses alone, the activity was 0.240 U/mL, and using glycerol alone it was 0.250 U/mL.     An Alternative Interpretation for the Moduli Fields of the Cosmology Associated to Type IIB Supergravity with Fluxes

    We start with a particular cosmological model derived from type IIB supergravity theory with fluxes, where usually the dilaton is interpreted as a Quintessence field. Instead of that, in this letter we interpret the dilaton as the dark matter of the universe. With this alternative interpretation we find that in this supergravity model gives a similar evolution and structure formation of the universe compared with the Λ\LambdaCDM model in the linear regime of fluctuations of the structure formation. Some free parameters of the theory are fixed using the present cosmological observations. In the non-linear regimen there are some differences between the type IIB supergravity theory with the traditional CDM paradigm. The supergravity theory predicts the formation of galaxies earlier than the CDM and there is no density cusp in the center of galaxies. These differences can distinguish both models and can give a distinctive feature to the phenomenology of the cosmology coming from superstring theory with fluxes.Comment: 7 pages, 5 figures, references added, minor modifications, typos corrected.     Efecto de la adición de proteínas solubles recuperadas del agua de lavado de surimi de Pacific Whiting sobre las propiedades funcionales y mecánicas de surimi de Alaska pollock grado FA

    Soluble proteins from surimi wash water (SWW) can be insolubilized by complexing with chitosan-alginate allowing its recovery and the reduction of the organic matter in the processing water discharged from surimi processing plants. The objective of this work was to evaluate the effect of adding soluble proteins recovered from Pacific whiting SWW on the mechanical and functional properties of commercial Alaska Pollock surimi grade FA. Levels evaluated were 0 (control), 10, 30 and 50 g insolubilized SWW solids/kg Alaska Pollock grade FA surimi. The mechanical and functional properties of Alaska Pollock surimi pastes and gels were characterized by texture profile analysis (TPA), puncture test, expressible water (EW) and color attributes. TPA and puncture test parameters increased significantly (P≤0.05) when 10–30 g/kg of soluble proteins from Pacific whiting SWW were added. EW values increased also, indicating a decrease of the water holding capacity. Color parameters showed that all surimi gels increased in redness, an undesirable effect in the production of Alaska Pollock grade FA surimiLas proteínas solubles del agua de lavado del surimi (ALS) pueden ser insolubilizadas por medio de la formación de complejos con quitosano y alginato. Su recuperación por este método permite reducir la materia orgánica en el agua de proceso. El objetivo de este trabajo fue evaluar el efecto de la adición de proteína soluble recuperada del ALS de Pacific whiting sobre las propiedades mecánicas y funcionales de surimi comercial de Alaska Pollock de grado FA. Los niveles de adición evaluados fueron 0 (control), 10, 30 y 50 g sólidos insolubilizados de ALS/kg de surimi de Alaska Pollock de grade FA. Las propiedades mecánicas y funcionales se caracterizaron por medio del análisis de perfil de textura (TPA), prueba de punción, agua extraíble y atributos de color. Los valores de los parámetros de TPA y prueba de punción incrementaron significativamente (P≤0.05) cuando se adicionaron de 10 a 30 g/kg de proteínas solubles de ALS de Pacific whiting. El agua extraíble también se incrementó, indicando un descenso de la capacidad de retención de agua. Los atributos de color indicaron que todos los geles de surimi incrementaron su color rojo, lo cual podría ser desfavorable para la producción de surimi de Alaska Pollock grado FAThis work was partially supported by Grant no.     A detailed experimental and theoretical study of the femtosecond A -band photodissociation of C H3I

    The real time photodissociation dynamics of C H3I from the A band has been studied experimentally and theoretically. Femtosecond pump-probe experiments in combination with velocity map imaging have been carried out to measure the reaction times (clocking) of the different (nonadiabatic) channels of this photodissociation reaction yielding ground and spin-orbit excited states of the I fragment and vibrationless and vibrationally excited (symmetric stretch and umbrella modes) C H3 fragments. The measured reaction times have been rationalized by means of a wave packet calculation on the available ab initio potential energy surfaces for the system using a reduced dimensionality model. A 40 fs delay time has been found experimentally between the channels yielding vibrationless CH3(ν=0) and I(2P3/2) and I*(2P1/2) that is well reproduced by the calculations. However, the observed reduction in delay time between the I and I* channels when the C H3 fragment appears with one or two quanta of vibrational excitation in the umbrella mode is not well accounted for by the theoretical model. © 2008 American Institute of Physics.This work has been financed by the Spanish MEC through Grant Nos.     Tolerance analysis for efficient MMI devices in silicon photonics

    The proceeding at: IX Conference Silicon Photonics, took place at 2014, March, 8 in S. Francisco (USA).Silicon is considered a promising platform for photonic integrated circuits as they can be fabricated in state-of-the-art electronics foundaries with integrated CMOS electronics. While much of the existing work on CMOS photonics has used directional couplers for power splitting, multimode interference (MMI) devices may have relaxed fabrication requirements and smaller footprints, potentially energy efficient designs. They have already been used as 1x2 splitters, 2x1 combiners in Quadrature Phase Shift Keying modulators, and 3-dB couplers among others. In this work, 3-dB, butterfly and cross MMI couplers are realized on bulk CMOS technology. Footprints from around 40um2 to 200 um2 are obtained.     Eficacia de la alta presión hidrostática como tratamiento cuarentenario para mejorar la calidad de los frutos del mango infestados por la mosca de la fruta Mexicana Anastrepha ludens

    High hydrostatic pressure (HPP) has been reported as an alternative quarantine process in fruits infested by Ceratitis capitata Wiedemann, Rhagoletis indifferens Curran and Cydia pomonella (L.). In Mexico and other Latin-American countries, the Mexican fruit fly Anastrepha ludens Loew is one of the most important insects infesting mangoes, citrus, and other fruits. The present study aimed to determine the effect of pressure level and time on the survival of eggs and larvae of the Mexican fruit fly. Eggs and larvae were pressurized at 25, 50, 75, 100, or 150 MPa for 0, 5, 10 or 20 min at 25 8C. Ripe and green mangoes were also pressurized under the same conditions. On pressurized eggs of 1, 2, 3, and 4 days old, their ability to hatch was recorded. On pressurized first, second and third instars, the percentage of survival was registered. Furthermore, third instars were studied for their ability to pupate and to develop adults. The results showed that although most of eggs and larvae died at pressures lower than 100 MPa, some of them were able to survive even at 150 MPa, and a few third instars were able to pupate and to develop to adulthood. Green mangoes were affected by pressures above 75 MPa but they were more resistant than ripe mangoes. HPP treatments seem to be feasible as a quarantine process for mangoes; however, more studies, such as combining HPP with temperature treatments, are needed in order to decrease the pressure level to avoid fruit damageLa alta presión hidrostática ha sido descrita como un proceso de cuarentena alternativa en frutas infestadas por Ceratitis capitata Wiedemann, Rhagoletis indifferens Curran y Cydia pomonella (L.). En México y otros países Latinoamericanos, la mosca de la fruta mexicana Anastrepha ludens Loew es uno de los más importantes insectos que infestan los mangos, cítricos y otras frutas. El presente estudio tuvo como meta determinar el efecto del nivel de presión y tiempo sobre la supervivencia de huevos y larvas de la mosca de la fruta mexicana. Huevos y larvas se presurizaron a 25, 50, 75, 100, y 150 MPa durante 0, 5, 10, y 20 min a 25 8C. Mangos maduros y verdes también se presurizaron bajo las mismas condiciones. En huevos presurizados de uno, dos, tres y cuatro días de vida, se registró su capacidad para eclosionar. En primera, segunda y tercera etapa larvaria presurizada, el porcentaje de supervivencia también se registró. Además, en la tercera etapa larvaria se estudió su capacidad para salir de la crisálida y desarrollar adultos. Los resultados mostraron que aunque la mayoría de los huevos y larvas murieron a presiones por debajo de 100 MPa, algunos de ellos fueron capaces de sobrevivir aun a 150 MPa, y unas pocas larvas de tercera etapa fueron capaces de salir de la crisálida y desarrollar adultos. Los mangos verdes se vieron afectados por las presiones por encima de 75 MPa pero fueron más resistentes que los mangos maduros.
